Buckwheat Waffles : the first of the Waffle Recipes
Trivia: Buckwheat is a member of the rhubarb family, not the wheat family as you might expect. It is extremely healthy, being full of potassium, phosphorous, tryptophan, niacin and protein.
Yeast raised waffles are particularly delicious. Do give this one a try. You won't regret it.
Ingredients for Buckwheat Waffles
2 1/4 tsp dry yeast
1/4 cup water, warm
1 tsp sugar
2 cups lukewarm milk
1/2 tsp sea salt
1 1/2 cups flour
1 cup Buckwheat Flour
2 tbsp sugar
5 tbsp butter, melted
2 beaten eggs
1/2 tsp baking soda
Add the sugar and yeast to the warm water. In about ten minutes, when the mixture is ready, add the warm milk and salt. Add the flours and whisk. Place this in the refrigerator for several hours, or overnight. When ready to cook, add the sugar, butter, eggs and soda. Cook in your waffle iron.

Whole Wheat Waffles : the next Waffle Recipe
Ingredients for Whole Wheat Waffles
2 cups whole wheat flour
2 tsp baking powder
1/2 tsp salt
3 eggs, separated
2 cups plus 2 tbsp milk
1/2 cup oil
1 cup chopped or shredded apple, unpared
1/2 cup chopped nuts (optional)
Using a beater, such as the excellent KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White, beat together the egg yolks, milk and oil. Blend thoroughly. Add the whole wheat flour, baking powder and salt. Beat until it is smooth. Add the chopped apple and nuts. Beat the egg whites until stiff. Fold in with a wire whisk.
Preheat your waffle iron and brush with oil. Add enough batter to cover the iron about 3/4 of the way. Bake until they are richly gold. It's best if you don't open the waffle iron too soon.
