Cinnamon Biscuit Recipe
Filling
1/4 cup butter, soft but not melted
1/2 cup brown sugar
3/4 tsp. cinnamon
1 tbsp Kahlua liqueur
1/2 cup chopped pecans
1/3 cup raising or dried, chopped cranberries
Beat all ingredients together, except raisins and nuts. Stir them in last. Set aside.
Sweet Cinnamon Buns
2 cups flour
3 tbsp sugar
2 tsp baking powder
1/4 tsp baking soda
12 tsp salt
1/2 cup butter from the fridge, chopped up
1 egg
1/2 cup buttermilk
Mix the first five ingredients together. Cut in the hard butter, using a pastry blender
if you have one. In a separate bowl, beat the egg and mix in the buttermilk until blended. Toss into flour mixture and stir to form a soft dough. Add additional buttermilk if necessary. Turn onto floured board and need a few times. Dust a rolling pin with flour and roll dough ito a 12 inch by six inch rectangle.
Spread the filling over the dough, almost to the edges. Roll it up as you would if you were making a jelly roll, then push the seam together. Cut this into twelve equal pieces. Place into two greased, round cake pans.
Preheat oven to 400 °F. Cook until done. This takes approximately 18 minutes. Take them out of the oven and turn onto a rack to cool. Ice when cool.
Glaze
1/2 cup icing sugar
1 tbsp butter, softened
2 1/2 tsp milk
Mix together, then slather over these cooled sweet cinnamon biscuits.
