Staff of Life Bread Recipe
This recipe makes five loaves of bread.
3 packages of yeast
1 cup warm water
1/3 cup molasses
3 cups rolled oats
1 1/2 cup boiling water
1 cup cornmeal
1 cup rye flour
5 cups whole wheat flour
1/2 cup bran
1 cup sunflower seeds
1/2 cup oil
6 1/2 cup warm water (second amount)
1 tablespoon salt
7 cups all purpose flower
Soak yeast, warm water and molasses together for ten minutes. In a separate pot, stir the oats into the 1 1/2 cups of boiling water for two or three minutes. Remove from heat.
Using a very large bowl, mix the cornmeal, rye flour, whole wheat flour, bran, seeds, oil, 6 1/2 cups of warm water, salt and four cups flour. After mixing it together, add the yeast mixture and mix again. Cover and rise until it is double, perhaps an hour.
Sprinkle two cups of all purpose flour on a kneading board. Place the dough on the floured board and knead. Although it is sticky at first, persevere and knead about two hundred times or for ten minutes.
Shape into a long roll, then cut into five pieces. Take a rolling pin and roll each one out, then roll it up like a jelly roll. Place in greased (or non-stick) 8 1/2 by 4 1/2 loaf pans. Tuck in the folded ends.
Brush the tops with oil or melted margarine. Rise in warm spot until one inch above the loaf pans. Avoid letting the loaves over rise.
