Sesame Cheese Bread Recipe
1 pkg granular yeast
1 tsp sugar
3/4 cup water, lukewarm
1 cup scalded milk
2 tbsp sugar (second amount)
2 tsp salt
2 tbsp butter
2 cups shredded, old Cheddar Cheese
4 1/2 cups all-purpose flour, sifted
1 egg yolk (for top)
2 tbsp sesame seeds (for top)
Using a large mixing bowl (ie the KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White, soak the yeast with the 1 tsp sugar in the lukewarm water. Let it stand for about ten minutes.
Stir into the scalded milk the 2 tbsp sugar, salt and butter. Cool to lukewarm. Add the milk mixture and cheese to the risen yeast liquid. Add 3 cups of flour. Beat until you have a smooth dough. Work in one more cup of flour. Cover and rise until more than doubled.
Sprinkle your kneading board with the remaining flour. Punch the dough down and turn it onto your board. Knead about 100 times. Cut this into four pieces and shape each into a long roll. Twine two rolls together like a two-strand rope. Place each of the two loaves in buttered or non stick loaf pans. Tuck the ends under, then brush the tops of the loaves with undiluted egg yolk. Sprinkle sesame seeds all over the yolked top. Let rise for two hours. Bake at 375° for thirty minutes or until done. Cool on racks.
