Recipe Pumpkin Bread with Spices

3 cups white flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 1/2 tsp ginger
1 tsp cloves
1 tsp vanilla
1/2 cup corn syrup
1 cup oil
2 cups canned pumpkin or your own puree
1 cup raisins
1 1/2 cup granulated sugar
4 eggs
1 cups chopped walnuts or other nuts, divided

Preheat oven to 325 F.

Sift dry ingredcients together.

Beat eggs until light. Gradually add sugar. Beat in oil, corn syrup, vanilla and pumpkin.

Fold in flour mixture. Add raisings and 3/4 cup nuts.

Line 2 loaf pans with buttered wax paper. Pour the batter into pans and sprinkle remaining nuts on top. Bake for 60 to 65 minutes or until done. Turn recipe pumpkin bread out onto racks, remove wax paper. Cool.

Recipe Pumpkin Bread Made with Cranberries

3/4 cup butter
1 tsp salt
2 cup sugar
2 tsp cinnamon
3 eggs
1 16-ounce can Pumpkin or two cups pureed pumpkin
3 1/2 cup flour
1 cup chopped nuts
1 1/2 tsp baking soda
2 tsp grated orange rind
1/2 tsp baking powder
1 cup chopped cranberries

Preheat oven to 350 F.

Cream butter and sugar. Add eggs, 1 at a time, mixing well after each addition. Combine dry ingredients, and add alternately with pumpkin. Stir in nuts, rind and cranberries. Pour batter into 2 greased and floured 9x5-inch pans. Bake at for 60 to 65 minutes. Cool, and frost recipe pumpkin bread if desired.

Recipe Pumpkin Bread with Chocolate Chips

1 tbsp heavy cream
1/2 cup powdered sugar

Preheat oven to 350 F.

Mix dry ingredients together. In separate bowl, cream butter and gradually add the sugar, eggs and pumpkin. Mix well. Stir dry ingredients into the creamed mixture, blending well. Stir in chips and nuts. Pour in a greased and floured 9x5 loaf pan. Bake for 45-50 minutes or until done. Cool on rack.

Mix cream and powdered sugar together. Spread over cooled recipe pumpkin bread.
