8 ounces milk (which is one cup)
1/4 cup of butter
1 cup of pumpkin
2 teaspoons of salt
1/2 teaspoon nutmeg
1 cup raisins
1/2 cup of water
2 eggs (that have been sitting out of fridge for a couple of hours)
1/4 cup sugar
1 teaspoon of cinnamon
2 packages of active dry yeast
6 to 7 cups of flour

Heat the liquids plus butter in a pan on the stove top. Heat until the mixture is lukewarm. Then, scrape it into a bowl and add the pumpkin, sugar, salt, spices, yeast and one cup of flour. Using your KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White, beat for two minutes. Stir in the raisins.

Using a strong mixing spoon, stir while slowly adding the rest of the flour. The dough should stop adhering to the bowl sides.

Flour a board, turn the dough onto the board and knead for seven or eight minutes. Add as little flour as you can manage, just to prevent the dough from sticking.

Grease a bowl. Put the dough in the bowl and turn it over to get grease on the top. Let rise, covered, until it is twice the size. Punch it down at that point. Take it out of the container and cut it ito two pieces.

1 package yeast
3 cups of whole wheat flour

1 can canned pumpkin, or cooked, pureed pumpkin
1 tablespoon pumpkin pie spice
1 cup canned evaporated milk, warmed
1 tsp salt

Put all the ingredients into pan. Use the setting for whole wheat.

Pumpkin Bread Recipe with Cider

This interesting pumpkin bread recipe is a great treat in the fall when apple cider is popular. It's a quick bread.

1 cup brown sugar, packed
1 cup canned pumpkin, or cooked, pureed pumpkin
1/2 cup oil
1/2 cup apple cider or juice
1 egg
1 3/4 cups flour
1/2 cup whole wheat flour
3 tsp baking powder
1 1/2 tsp cinnamon
1/2 cup chopped nuts
1/2 cup raisins

Preheat the oven to 350°. Grease and flour the bottom only of a standard 9 X 5 loaf pan.

In a bowl, combine the brown sugar, pumpkin, oil, apple cider and egg. Mix. In a separate dish, combine the two flours, baking powder and the spices. Stir this into the pumpkin mixture. Stir until it has just moistened, then add the nuts and raisins. Place in the pan and bake for about an hour -- give or take. Insert toothpick in the middle to test doneness. When cooked, cool for ten minutes then remove from the pan. Cool completely then wrap and refrigerate this pumpkin bread recipe.
