Web's Best Portuguese Bread Recipe
This first Portuguese bread recipe is called broa in Portugal. It's a dense bread with a lovely flavour.
Trivia: The Portuguese have had a strong influence on Hawaiian cooking. The well known Hawaiian sweet bread is of Portuguese origin.
Portuguese Bread Recipe #1: Peasant Bread
2 tablespoons sugar
2 packages active dry yeast
1/2 cup warm water (first amount)
1 package (8 oz.) uncooked barley cereal (found in the baby food section of your supermarket)
2 1/2 cups stone-ground cornmeal, preferably white
4 teaspoons salt
about 4 3/4 cups all-purpose flour
2 1/2 cups warm water (second amount)
Mix sugar and yeast in first amount of warm water and let stand until foamy.
In another mixing bowl, you combine the dry ingredients, leaving out 3/4 cup of flour which you will use for kneading. Add the second amount of warm water and stir. Flour your hands and shape this mixture into a ball. Cover it and let is rise for about an hour or until it has doubled in size.
Punch down, turn onto floured surface and knead. Work in the remaining flour. Knead for about five minutes.
Cut the dough ito two equal pieces. Form each into a round shape, coat with flour and place on a greased cookie sheet. Cover and rise until doubled in size.
Place in a preheated 400° oven. Bake for about 35 minutes or until brown. Throughout the baking, spray with a mist of water after about five minutes in the oven, and again in another ten minutes. This spraying gives you the crispy crust you want.
When baked, cool your Portuguese bread recipe on wire racks.

1/2 cup sugar
3 tbsp butter
1 tsp salt
3 1/2 cup unbleached flour
2 tsp yeast (1 pkg)
1 tsp Dough Enhancer
Place your ingredients in the bread machine in the order above. Choose the "white bread" setting and push Start.
