Orange Loaf Recipe

This recipe is a simple one. You could add raisins, currants, dried cranberries or nuts to fancy it up a little.


zest of one orange
1 cup sugar
1/2 cup of butter
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
juice of one orange


Preheat your oven to 325°F. Prepare a loaf pan by lining with waxed paper or parchment paper, or by oiling lightly.

Using a zester (like the Calphalon Citrus Zester), zest the orange into the sugar. Place both in a saucepan.

Add the butter and water .Bring to a boil. Remove from heat and cool.

In a separate bowl, mix together the flour, baking powder and salt.

Beat the eggs and orange juice together. Add this to the dry ingredients. Mix but do not over mix.

Add the cooled sugar mixture. Do not over mix.

Place the orange loaf batter into your baking pan. Bake until done. This takes approximately sixty minutes. A tooth pick in the middle should come out clean.

This orange loaf is a nice treat, buttered or served as is.
