Ingredients for Scottish Oat Bread
3 tbsp honey
1 1/2 cup milk
1/4 cup water
3 tbsp applesauce OR vegetable oil
2 tsp salt
3 tbsp gluten
3/4 cup oat bran
1 1/2 cups whole wheat flour
1 cup bread flour
1 1/2 cup oat flour
3 tsp yeast
Place these ingredients in your bread machine and process according to manufacturers instructions. Oat Bread Recipe #2: Oatmeal Bread
Ingredients for Oatmeal Bread
This oat bread recipe makes four loaves.
3 1/2 cup water
1/2 cup margarine
1/2 cup honey
5 1/2 cups white flour
4 cups rolled oats
4 1/2 cups wheat flour
1/2 cup wheat germ
1/2 cup cornmeal
4 packages yeast
2 tbsp salt
Heat the water, margarine and honey together, to lukewarm, or about 120°F. Add the white flour, oats, yeast, salt and eggs. Beat in a mixer for three minutes. A mixer with a dough hook, like the KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White is a good choice.
Add all the remaining ingredients and beat at a higher speed for three or four minutes, or until the dough is stiff.
Knead on a floured board until it is no longer sticky. Place in greased bowl. Turn over to grease other side, cover and rise until doubled. This usually takes about 45 minutes, depending on your room temperature. Punch down and cut into even portions. Roll out to about 3/8" in thickness. Roll this up like a jelly roll, punch down the ends, fold down the ends and place in greased pans.
Cover. Rise until doubled, about sixty minutes.
Bake this oat bread recipe at 375°F for forty minutes. Cool on wire racks and serve.
Oat Bread Recipe #3: Oatbran Bread
This is a nutritious loaf with a delicate flavor. Its excellent when toasted.
Ingredients for Oatbran Bread
1 package (5/16-ounce yeast
1 1/2 cups unbleached flour
1/2 cups bread flour
1/4 cups oat flour
1 tbsp wheat germ
2 tbsp sugar
1 tbsp dry milk
1 tbsp margarine
1 tsp salt
7/8 cup water
This oat bread recipe uses a bread machine. Put the ingredients into the bread pan. Use the White Bread setting.
