1/3 cup whole wheat flour
1/4 cup dark rye flour
1/3 cup rye flakes
1/3 cup wheat flakes
3 tbsp unsalted sunflower seeds
1 tsp salt
1 tbsp liquid honey
1 tbsp molasses
1 tbsp butter, not refrigerated
1 cup plus 3 tbsp boiling water
1 3/4 cups plus three tablespoons flour
2 tsp bread machine yeast
1 tsp water
Mix together the whole wheat flour, rye flour, rye flakes, wheat flakes, sunflower seeds, salt, honey, molasses, butter and boiling water. Let this sit for about thirty minutes until it has cooled.
Place this mixture in your bread machine's pan. Next, stir in the yeast and white flour. Use the dough/manual cycle. After this cycle has finished, place the dough on a floured surface. Your dough may be fine the way it is. If it is difficult to work with, knead in some additional flour. Cover it for quarter of an hour.
Punch your dough down, then shape it into a round shape that is about six inches in diameter. Grease a rimless baking sheet. Place dough on baking sheet and press the top down a little. Cover and rise for half an hour or until twice the size.
Score the bread loaf with three slashes. Mix the egg and 1 tsp water together and brush on top of bread. If desired, you can also sprinkle some wheat flakes on top of the bread at this time.
Bake in preheated 375 ° oven for quarter of an hour. Lower the temperature to 350° and bake another quarter hour. Bread is done when it sounds follow when tapped.
This granary bread recipe for the bread machine is a wholesome, delicious treat. Enjoy.
