Herb and Goat Cheese Bread Recipe

This herb and goat cheese bread recipe is such a wonderful accompaniment to a salad entree or to a tasty stew.

Tip: For herbs, you can use any combination of herbs. Examples are basil, rosemary, thyme, chives or parsley.

Tip #2: For the combination of chopped nuts and seeds, try sesame seeds, pumpkin seeds, pine nuts or toasted almonds.

This recipe makes four loaves that are on the small side.

Herb and Goat Cheese Bread Recipe

Ingredients for the Bread

1 cup milk
1/4 cup plus 2 teaspoons of sugar
2 packages dry yeast
3 cups all purpose flour
1/2 teaspoon of salt
8 tablespoons of cold butter
3 egg yolks
white of one egg for bread wash

Ingredients for the Filling

2 ounces of goat cheese, crumbled
1/2 cup of pesto
4 tablespoons butter, room temperature
1/2 cup chopped, fresh herbs
4 sun dried tomatoes in oil
4 cloves of garlic
1/4 cup of chopped nuts and seeds
sesame seeds for garnish

Preparation

Heat the milk until it is almost, but not quite boiling. Allow it to cool to lukewarm. Add 2 teaspoons of sugar and the yeast. Allow to stand for five or ten minutes. The mixture should be foamy.

Chop the cold butter into small pieces. Place it in a food processor, along with the flour, 1/4 cup of sugar and the salt. Pulse until this mixture is well mixed.

Add the egg yolks and yeast-milk. Process well, for approximately twenty or thirty seconds.

Place the bread dough in a bowl. Cover well and place in refrigerator for a minimum of four hours.

To make the filling, crumple the goat cheese and then mix it well with 1/4 cup of the pesto.

Divide the dough into four amounts.

Roll each piece of dough into a thin circle. Spread one tablespoon of the room temperature butter on each round. Spread the rest of the pesto on the four rounds.

Chop the herbs, sun dried tomatoes, nuts and garlic cloves.

Sprinkle this mixture over the buttered pesto. Lastly, dot this with the goat cheese and pesto mixture.

Lift each round of dough up so you fold it in half. Roll the edges and crimp around the edges to form a seal.

Grease two large baking sheets. Place two loaves of dough on each sheet. Cover and let rise until the dough is almost twice the size. This should take about three quarters of an hour or a little more.

Preheat the oven to 350°F.

Beat the egg white and brush it over the tops of the loaves. Sprinkle with the sesame seeds that you are using for garnish.

Place the baking sheets in the oven and bake for approximately half an hour. The herb and goat cheese bread should be a golden color when it is cooked.
