Flax Seed Bread Recipe
Ingredients for Flax Seed Bread Dough
2 tablespoons of granular yeast
1/4 cup honey
1 cup hot water
3 1/2 cups hot water (second amount)
1/4 cup molasses
2 1/2 teaspoons salt
5 cups all-purpose flour
5 cups whole wheat flour
3/4 cups cracked wheat
1 cup wheat germ
1 cup bran
1/3 cup flax seed
1/3 cup sesame seed
Add the first cup of hot water to the honey, and stir until the mixture is lukewarm. Sprinkle the yeast over top. Leave for about 15 minutes.
In a separate bowl, combine the 3 1/2 cups of hot water, molasses and salt. When this is cooled to almost lukewarm add it to the risen yeast liquid.
Using a very large bowl, mix together the flours, wheat germ, bran and seeds. Remove four cups of this mixture and add it to the liquids. Stir for five minutes. Add two more cups of flours and mix well.
Spill the remaining flours on a kneading board. Pat to about 3/4 inch thick. Place the dough on this flour. Using loose flour from the sides and begin kneading for about ten minutes. Knead in almost all of the flour but leave a little on the board.
Return the dough to the container. Place oil over the top. Cover and rise for about 75 minutes or until double in bulk. Put back on the kneading board and knead 25 times. Shape this into a roll, which you then cut into three pieces. Shape each piece into a loaf and place in pre-oiled loaf pans. Oil the tops.
Cover again and rise this dough until it is above the rims of the pans. This takes about an hour.
Place these loaves in a cold oven and bake at 375°F for 35 or 45 minutes. The bread is done when it sounds hollow when you tap the top of it.
Cool your flax seed bread on racks.
