These flatbread crackers are easy and fast to make and they go so well with soup, salad or dips. Best yet, they're light and have only 96 calories each.
Trivia: Cracked wheat is made from whole raw wheat kernels which have been crushed or chopped.
Flatbread Crackers Recipe
1/2 cup of sesame seeds
1/2 cup cracked wheat
1 cup flour
1 cup whole wheat flour
1 tablespoon of granulated sugar
1/2 teaspoon of salt
1/2 teaspoon of baking soda
1/3 cup of buttermilk
1/3 cup of soft butter or margarine
1 egg white
1 tablesppon water
2 tablespoons of poppy seeds
Preheat oven to 400°F.
Mix together the sesame seeds, cracked wheat, all flour, sugar, salt, and baking soda. Cut in the butter then add the buttermilk. Be sure all is mixed well.
Shape this into six equal balls. Flour a surface and roll these balls into circles that are as thin as you can get them. They should be less than 1/8 of an inch thick.
Use a spatula to transfer these circles to an ungreased baking sheet.
Make the topping by mixing the egg white with the water. Brush this over the top of the flatbread crackers, then sprinkle with the poppyseeds.
Bake in the oven for ten minutes or until the crackers are golden.
Remove from oven and transfer to a wire rack. Cool until the flatbread crackers are crisp, then break into a total of 24 pieces.
