Web's Best Danish Pastry Recipe

We usually refer to a Danish pastry recipe as simply a Danish -- but it's yummy no matter what name we use!

Trivia: Danish pastry, a specialty of Denmark (what else?) is popular throughout the industrialized world. It takes different forms from country to country.

Danish Pastry Recipe: Prune Danish

1 pkg granular yeast
1/2 cup lukewarm water
1 tsp sugar
2 1/2 cups sifted, all-purpose flour
1 tsp salt
2 tbsp sugar
1/2 pound hard butter, shredded
1 egg
3/4 cup prune puree
red jam

In large bowl, soak yeast with 1 tsp sugar in the lukewarm water for ten minutes. Measure the flour, salt and 2 tbsp sugar into another bowl. Shred the hard butter on a 1/4" shredder and mix it in evenly. It will be lumpy. Add the egg to the risen yeast liquid. Beat a little then add flour-butter mixture and stir with spoon until evenly blended. Scrape down sides of bowl, cover and chill for one hour.

Prune Puree

Cover 1 1/2 cup of prunes with water and stew until soft. Drain. Remove pits and force through sieve or puree in a blender. Add 1/4 cup sugar and 1 tsp cinnamon. Stir over heat until thick and reduced to 3/4 cup. Cool.

Method

Turn chilled dough onto well-floured board and roll out to 24 x 14 inch rectangle. Cut lengthwise into 3 even strips. Spread prune puree about 1 inch wide at center down entire length of each strip. Moisten one bare edge. Fold dry side over prune filling. Cover with moistened side. Cut each strip into 6 even pieces. With sharp knife slash each piece to within 1/2 inch of edges. Transfer to three buttered cookie sheets and spread-eagle each piece to look like a four-pointed star. Brush tops with one egg beaten with 1 tbsp cold water. Let rise one hour at room temperature. Bake at 425 ° for 10 to 12 minutes. At this high heat, these bake quickly and pans should be turned in oven and switched around on shelves. Do not over bake. Dot center with red jam. Brush points with plain icing.

Cheese Filling for a Danish Pastry Recipe

You might try this instead of the prune puree. It's good also. Or mix it WITH the prune puree? Why not?

2 (8 oz.) pkg. cream cheese
2 eggs
1/2 cup sugar
2 tsp. vanilla
1/2 cup raisins or glazed red cherries, chopped small (optional)

Beat cream cheese, eggs and sugar until smooth. Add vanilla and mix at medium speed for 5 minutes. Add fruit and stir. Spread on your Danish pastry recipe as you did above.
