Cranberry Cornbread Recipe

Cranberry Cornbread Recipe

This recipe makes about eight servings.

Ingredients

1 1/2 cups of cornmeal
1/2 cup of flour
a pinch of salt
1/2 cup butter
1/4 cup honey
1/4 cup brown sugar, packed
2 eggs
3/4 cup milk
cooking spray
1 1/2 cups cranberry sauce (made with whole berries)

Method

Preheat your own to 500°F. When the oven is hot, place a 10-inch cast iron skillet or cornbread pan inside the oven and allow it to heat. You will reduce the temperature later.

Mix together the cornmeal, flour baking powder and salt.

Place the butter, honey and brown sugar in the top of a double boiler (or use the microwave). Heat this until it just melts then let it cool somewhat before proceeding with the cornbread recipe.

In a separate bowl, mix together the eggs and milk. Add this to the honey-butter mixture. Whisk constantly as you want to ensure that the eggs do not cook in the warm mixture.

Remove your skillet or cornbread pan from the oven. Spray it with your cooking spray.

Place the wet ingredients into the flour mixture. Working quickly, combine the ingredients together. Pour this mixture into the hot skillet or pan.

Spread your cranberry sauce over top of this batter. Swirl it around with a knife the way you would do it you were making a marble cake.

Put the cornbread in the oven. Reduce the oven temperature to 350°. Cook the cornbread until it is done. This usually takes between ten minutes and twenty minutes. Test it periodically with a cake tester or toothpick. It is done when the tester comes out almost dry.
