Cinnamon Bun Yeast Muffins Recipe

Cinnamon Bun Yeast Muffin Recipe
This recipe makes one dozen muffins
Ingredients for the Muffins
3 cups flour
Ingredients for the Topping
2/3 cups sugar
1/2 teaspoon salt
4 teaspoons yeast (rapid rise variety)
1 1/3 cups of lukewarm milk
3 tablespoons vegetable oil
1/2 teaspoons vanilla extract
2 tablespoons of butter, softened
Ingredients for the Icing
2/3 cup brown sugar
3/4 teaspoon cinnamon
pinch of salt
1 cup icing sugar (or confectioners sugar)
1 or 2 tablespoons of milk
Use a 12 cup muffin pan and spray the cups with non-stick spray.
In the first bowl, combine the flour, sugar, salt and yeast.
Add the remaining muffin ingredients to the dry ingredients and beat well.
Ladle the batter into the the twelve muffin cups, dividing it equally. Set this aside and let it rest for a quarter of an hour.
In the meantime, mix the topping ingredients together, forming crumbs.
Sprinkle these crumbs over each muffin. Take a knife and quickly cut it through each muffin to incorporate some of the crumbs.
Put the muffins in a cold oven. Turn the oven on to 350°.
Bake the muffins until done. Usually they take approximately twenty minutes. They are done when the edges are a golden color and the top springs back when touched.
Remove from oven. Let sit for five minutes then remove from the pan. Cool for half an hour.
To ice, mix the milk and icing sugar toether and pour it over each muffin.
These cinnamon bun muffins are quick and easy to make, and very good.
