Cinnamon Bread Recipe

This recipe makes one loaf if you are using a 9" by 5" by 3" pan.

2 cups flour
3/4 cup sugar
2 teaspoons of baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon, ground
1/2 teaspoon salt
1 cup buttermilk
1/4 cup vegetable oil
2 eggs
1 1/2 teaspoon of vanilla extract
Topping 1 1/2 tablespoon sugar
1 teaspoon cinnamon
1 tablespoon of soft butter

Prepare your loaf pan by greasing it. If desired, create a "sling" from parchment paper or waxed paper and place this in the bottom, with sides overlapping the top. This will allow you to lift the bread out of the pan when it is finished baking.

Preheat the oven to 350°.

Put all of the bread ingredients into a bowl and beat them with your electric mixer for three minutes. How easy is that?

Pour the batter into your prepared pan.

Mix together the three topping ingredients and sprinkle this over top of your cinnamon bread batter. Swirl this through the batter with a knife. This bread has a marbled look.

Bake until done, which takes about 45 minutes. Test by sticking a toothpick or cake tester in the middle. When the tester comes out dry and clean, the bread is done.

Remove your cinnamon quick bread from the oven and cool in pan for ten minutes. Remove from pan and enjoy.
