Recipe for Cherry Cornbread
This quick bread recipe calls for dried, tart cherries. They are often available where bulk foods are sold. If desired, you can substitute them with any other dried fruit.
2 cups of corn meal
1/2 cup of pastry flour
2 1/2 teaspoons of baking powder
1 teaspoon of salt
2 tablespoons of sugar
1 1/2 cups milk
5 tablespoons butter, melted
1 1/2 cups of dried tart cherries.
Preheat your oven to 400°F. Prepare a nine inch by nine inch baking pan by greasing it and lining with parchment paper or waxed paper.
In one bowl, mix together the dried ingredients.
In a separate bowl, mix the wet ingredients together. Leave the cherries aside for later.
Mix the wet ingredients into the dry ingredients. Do not over stir.
Fold the dried cherries into the cornbread batter.
