Tip #1: If buying a liter of buttermilk seems wasteful, look in the bulk food bins for butter milk powder. You can buy a small amount and reconstitute it in cold water.

Cheese and Chives Scones Recipe

2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/4 cup butter, cold
1 1/3 cups Cheddar cheese
1/2 cup 2% milk
1/2 cup buttermilk
1 egg
1/4 cup fresh chives, chopped

Preheat oven to 400° F.

Mix together the dry ingredients (flour, baking powder, salt and sugar).

Chop the cold butter into small cubes and cut it into the dry ingredients. The batter should resemble coarse crumbs when you are finished cutting.

Grate the Cheddar cheese and stir in one cup. Keep the remaining cheese for later.

Using a separate bowl, combine the 2% milk, buttermilk and the egg. When this is blended, stir in the chopped chives.

Gradually add the wet ingredients to the dry ones, forming a soft dough. Do not overmix.

Grease a baking sheet. Scoop up 1/4 cup of dough and drop onto the baking sheet. Continue dropping the dough at 2 inch intervals until all is used. You should have a dozen scones or perhaps a few more.

Sprinkle the remaining Cheddar Cheese over the tops of the scones.

Bake until done. This takes approximately 15 minutes or a little longer.

Remove from the oven and enjoy your cheese and chive scones. They are delicious.
