Boston Brown Breakfast Bread with Date and Nuts Recipe
Ingredients
2 cups finely chopped pitted dates
1 cup 2% reduced-fat milk
6 tablespoons butter
1/4 cup unsulfured molasses
1 2/3 cups all-purpose flour
2/3 cup yellow cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 egg
2/3 cup sugar
1/2 teaspoon vanilla extract
1 cup toasted pecan halves, chopped
Method
Preheat oven to 325°.
Place the dates, butter, molasses and milk in a pan and heat just until the mixture starts to simmer. Place the heated mixture in a bigger bowl. When it is cooled, using a separate bowl, mix together the dry ingredients. In yet another bowl, mix together the sugar, egg and vanilla. Add the sugar mixture to the date mixture and stir. Add the nuts and dry ingredients. Stir until blended.
