This Boston Breakfast Bread with Date and Nuts is a type of Boston brown bread, but baked rather than steamed.

Trivia: Boston brown bread was created because early New Englanders had more rye flour and cornmeal than they had wheat. Traditional Boston brown bread combines the three.

Boston Brown Breakfast Bread with Date and Nuts Recipe

Ingredients

2 cups finely chopped pitted dates
1 cup 2% reduced-fat milk
6 tablespoons butter
1/4 cup unsulfured molasses
1 2/3 cups all-purpose flour
2/3 cup yellow cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 egg
2/3 cup sugar
1/2 teaspoon vanilla extract
1 cup toasted pecan halves, chopped

Method

Preheat oven to 325°.

Place the dates, butter, molasses and milk in a pan and heat just until the mixture starts to simmer. Place the heated mixture in a bigger bowl. When it is cooled, using a separate bowl, mix together the dry ingredients. In yet another bowl, mix together the sugar, egg and vanilla. Add the sugar mixture to the date mixture and stir. Add the nuts and dry ingredients. Stir until blended.

Grease a nine inch by five inch loaf pan like the SilverStone Simply Baking 9-by-5-Inch Loaf Pan.

Pour the mixture into the loaf pan and bake for approximately 70 minutes. Remove from pan and cool on a wire rack.

Even though there is minimal fat, the dates make this a rich bread.
