Blueberry Breakfast Bread Recipe
Ingredients
1 1/3 cups of flour
3/4 cups of oats, quick cooking variety
1/3 cup of sugar
2 teaspoons baking powder
3/4 cup of milk
1/4 cup of vegetable oil
1 egg
1 cup blueberries, frozen
Using a separate bowl or mixing cup, mix together the egg, milk and oil. Dump this in the dry ingredients and stir just until the batter is moistened. Do not overstir. The batter should be lumpy. At this time, fold the blueberries into the batter.
Place the batter into your baking pan and place in oven. Bake until the blueberry breakfast bread is done. It will pull away from the sides of the pan. Usually this takes about 20 minutes or perhaps a little more.
Remove the blueberry breakfast bread from the oven and cool it on a rack for a few minutes. Serve while warm for breakfast -- or any time for a healthy snack.
