This down East blueberry bread pudding recipe is a real treat.

makes six servings of down East blueberry bread pudding recipe

2 tablespoons sugar (or equivalent amount of artificial sweetener
1 tablespoon cornstarch
10 packages dietetic sweetener
1 pint fresh blueberries
1 teaspoon lemon juice -- fresh
4 slices stale white bread
1 1/2 tablespoon margarine or butter, at room temperature
1/2 cup evaporated skimmed milk
4 slices stale white bread


Stem the blueberries if needed.

Spray a shallow, 6-cup casserole with non stick vegetable spray.

Mix together sweetener, sugar and cornstarch. Place the blueberries in the casserole. Add the sugars and lemon juice. Mix together. Then, take a potato masher and smash up the blueberry mixture. Butter the stale bread on one side only. Places the slices on top of one another and cut them into cubes that are about half inch.

Tip the mixture into the casserole and mix well with the blueberries.

Bake uncovered at 350 °F for half an hour. Take it out of the oven then add the evaporated milk and stir well.

Return this to the oven and bake for another fifteen minutes.

Serve this blueberry bread pudding warm with milk, cream, caramel sauce, ice cream or any other yummy topping.
