Banana Blueberry Bread Recipe

Banana Blueberry Bread Recipe


1/2 cup of butter
1 cup white sugar
1 cup banana (mashed)
1 egg, large (beaten)
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup oats (quick cooking)
1 teaspoon of vanilla extract
1 cup blueberries, either fresh or frozen
1 teaspoon cinnamon (optional)


Oil or grease your loaf pan and turn the oven on to 325 °F.

In your first bowl, combine your dry ingredients (flour, oats, salt, soda and cinnamon if you are using it).

In a second bowl, cream together the butter and sugar. Mix in the egg first then mix in the mashed banana.

Fold the wet ingredients into the dry ingredients. Do not overmix. Stir in the vanilla and then gently fold in the blueberries.

Put the batter in your prepared pan and bake until done. This should take about one hour. To test, poke a toothpick in the center. If the toothpick comes out clean, the banana blueberry bread is done.
