1/3 cup butter
2/3 cup sugar
2 eggs
1 1/4 cup mashed, ripe banana
1/3 cup buttermilk
1/2 tsp vanilla extract
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/4 cup ground flax seeds
2 tbsp flax seeds
Method
Preheat oven to 350°.
Beat butter and sugar well, then add eggs. Beat well after adding each egg. Beat in the banana, buttermilk and vanilla.
Combine the dry ingredients in a small bowl, then add to the banana mixture. Stir just to moisten.
Grease a 8 1/2 " by 4 1/2 " inch loaf pan like the Norpro Stainless Steel Loaf Bread Pan. Place the batter in the loaf pan and bake for about an hour. Cool your banana flax seed bread recipe for a few minutes, then remove from the pan.
