Apple Thyme Quick Bread Recipe

This recipe makes one small loaf.


1/2 half apple, chopped
40 ml extra virgin olive oil
50 grams butter
1 grams sugar
1 egg
3/4 cup flour
1/4 teaspoon baking powder
2 teaspoons of fresh thyme
1 1/4 cups of buttermilk
pinch of salt


Preheat oven to 325° F. You will be using one small loaf pan. Begin by buttering your pan and sprinkling it generously with sugar.

Place the butter, egg and sugar in a small bowl and whisk together .Do this until the mixture is fluffy, then slowly drop the olive oil into the batter, whisking all the while.

With a spatula, fold the chopped apples and thyme into your quick bread batter.

In a separate bowl, sift the dry ingredients. Stir this into the wet batter. Do not over stir. Place the batter in your prepared small loaf pan. Garnish with additional chopped apple or thyme if desired.

Bake until done. This takes thirty minutes or less. Test by checking with a toothpick or cake tester.

Remove your apple thyme quick bread from the oven. After ten minutes, remove it from the pan and allow to cool completely.
